Chocolate Truffles

Who could possibly survive without chocolate in their diets? I sure can't. These truffles are every bit as delicious as the full fatted, unhealthier versions that you by in candy stores with LESS sugar and fat. Using soy milk high in soy protein is beneficial in heart health and the prevention of heart disease, cancer and many other diseases and health issues. These are delicious and makes about 12 so enjoy, sparingly.


4 oz non-dairy organic dark chocolate
¼ cup soy milk
3 tbsp canola oil
1 tsp of any flavored extract.
½ cup ground almonds or coconut.

Gently heat the chocolate, soy milk, canola oil, and choice of flavoring together in heavy bottomed pan or double boiler. Stir constantly until the chocolate is completely melted and all ingredients are well blended. Refrigerate the mixture overnight in sealed container.
Roll 1 tbsp of truffle mixture into balls gently between cold hands. Then, roll the balls in the ground almonds or coconut.
Store in sealed container in freezer until ready to serve.
