Heart Healthy Jambalaya

In honor of Fat Tuesday and the start of Mardi Gras, A Healthy jambalaya recipe to warm us all up and fill our tummies without the worry of getting fat. Made with chicken sausages instead of polish sausage, shrimp, chicken breast, brown rice and tons of fresh vegetables. 

2 Chicken Breasts, bone and skin removed, chopped
8 oz of Chicken sausage
8 oz peeled and cleaned shrimp
3 cups Minute Brown Rice
3 tsp Garlic, Minced
4 Roma Tomatoes, chopped 
1/2 cup carrot, chopped
1/2 cup Green bell peppers, sliced thin
1/2 cup Red bell peppers, sliced thin
small bunch of Broccoli rabe, stemmed and chopped
1/2 cup Onion, chopped
1/4 tsp Pepper, crushed red or cayenne
1/2 tsp Onion powder
1/2 cup Celery,  diced
2 tsp Black Pepper
1 1/2  tsp cumin powder
1 tsp Tabasco Sauce
2 cups Water
4 cups Low-sodium chicken broth
2 tsp Canola Oil

In a large pot, Heat oil.  Cook chicken and chicken sausage until lightly browned. Stir in onion, carrot, bell pepper(s), celery, broccoli rabe and garlic. Season with onion powder, cayenne and pepper. Sautee until onion is translucent and tender. Add rice, chicken broth, tomatoes, and water. Stir until well combined. Bring to a boil, then reduce heat, cover, and simmer until rice is tender. Stir in tabasco sauce, and serve.
