Lemon Pepper Swai

Swai fish is similar to a cat fish without the muddy flavor.  Sweet mild flavors in this fish goes well with most anything.  Swai is naturally low in saturated fat and cholesterol, an excellent source of lean protein. It also provide omega 3 fatty acids which are known offer significant health benefits such as lowering cholesterol and maintaining a healthy weight. 

3 Swai filets, washed and patted dry
1 lemon
2 tbsp  olive or canola oil
1/4 cup red wine
2 tbsp smart balance omega 3 butter
4 cloves garlic, minced.
sea salt and pepper to taste

Heat large deep pan over med-high heat.  Add oil and butter until melted, throw in garlic and saute slightly.  Add wine and a dash of salt then put fish in pan.  Sprinkle each filet with salt, pepper and fresh lemon zest and cook for about 3-4 minutes.  Carefully turn the fish over and sprinkle salt, pepper and fresh lemon zest on each filet and continue cooking for another 5-8 minutes until fish is done. Remove from pan and squeeze fresh lemon juice over each filet. Enjoy!
