Perfect Loin Roast (beef and pork)

This recipe is high in protein and low in fat. Cooking it in this way ensures the meat come out tender, great tasting and juicy, every time!
Slice this meat in really thin slices and use as a great alternative to store bought lunch meats. Those store bought and deli meats contain solutions of salt water for preserving.

Extra lean beef loin roast:
Combine together, 1 tbsp sea salt , 1 tbsp fresh ground black pepper, 1 1/2 tsp crushed red pepper flakes and 2 tbsp garlic powder. If you have it, 1 1/2 tsp smoked paprika.

Extra lean pork loin roast:
Combine together, 1 tbsp sea salt , 1 tbsp fresh ground black pepper, 1 tbsp garlic powder, 2 tbsp dried time and 1 tsp dried oregano.
Rub meat well with spice mix and wrap in aluminum foil. Place in a shallow roasting pan and place in the refrigerator for 4 hours minimum, overnight would be best.

Preheat oven to 550°F degrees.
Remove meat from foil.

Beef Loin: Roast for 5 minutes per pound for RARE, 6 minutes per pound for MEDIUM or 7 minutes per pound for WELL DONE.

Pork Loin: Roast for 6 minutes per pound for well done.

Turn off oven at the end of cooking time and DO NOT OPEN OVEN DOOR FOR TWO HOURS.
