Trail Mix Cookies

These cookies are my families favorite. It's filled with a lot of hearty ingredients which makes it easier to allow my kids to eat more than one.


1 cup whole wheat flour (a pinch more depending on the moisture of the mix)
1 1/2 cups rolled oats.
1/2 tsp baking soda
1/2 tsp baking powder
pinch of salt
1 Tbsp Cinnamon
1/2 tsp Nutmeg
1/2 cup honey
1/4 cup peanut or almond butter
3/4 cup sugarless applesauce
1/8 cup canola oil
1 Tablespoon Molasses
2 egg white beaten with 1tbsp water
2 tsp Vanilla

trailmix:
1/4 cup raisins
1/4 cup walnuts
1/4 shelled sunflower seed
1/4 cup toasted coconut
1/4 cup craisins(dried cranberries)
1/4 cup dark chocolate chips
1/4 cup chopped toasted almonds

Preheat oven 335* due to the honey in the cookie.
In a large bowl, mix all the dry ingredients together with wire wisk. In a medium bowl, mix all the wet ingredients together. Combine the wet ingredients with the dry ingredients, slowly making sure not to over mix. Add the trailmix items and fold until all ingredients are incorporated evenly. If the mixture seems too wet, add a bit of flour. Refrigerate the mix for 20 minutes. Drop by tablespoonfuls onto a lined baking sheet. Lightly press down with fork to ensure even cooking. Bake for about 15-20 minutes or until golden.
