Healthy Fudge Cake

It's said that every person who diets, binges on a lot of crap food at some point as a "treat". Then, they spend the next week starving themselves to get all the extra weight off they've just put on. Silly really since by doing so, your body regenerates that "eat crap" mechanism in our brains continuing the vicious cycle.
That being said the biggest desired junk food is the Chocolate Cake. This chocolate cake recipe is only about 200 calories and 5g fat with 180mg sodium per 1 cup serving. The richness of this cake fulfills a lot cravings, while filling you up quick. I recommend binging on this instead.


1 cup unbleached or whole-wheat all-purpose flour
3 tbsp brown sugar
1/4 cup unsweetened cocoa powder, sifted
1 1/2 teaspoons baking powder
1/8 teaspoon salt
2 egg whites
1/2 + 2 tbsp cup vanilla silk or 2% milk
3 1/2 tablespoons canola oil
2 teaspoons vanilla extract
3/4 cup non-dairy organic, chocolate chips(optional)

Combine:
1 1/3 cups hot brewed coffee
2/3 cup packed light brown sugar

Top with:
1/4 cup chopped walnuts toasted

Preheat oven to 350°F.
grease a 1 1/2- to 2-quart baking dish with canola oil.
Whisk together the whole-wheat flour, sugar, cocoa, baking powder and salt in a large bowl then, whisk eggs, milk, oil and vanilla in a small bowl. Add wet ingredients to the flour mixture and stir with a rubber spatula until just combined. Fold in chocolate chips. Scrape the batter into the prepared baking dish.
Mix hot coffee and brown sugar in the measuring cup and pour over the batter. Sprinkle with nuts. The batter will look strange at this point but, don't worry. While it's baking, the cake will form on top with a rich chocolaty sauce underneath.
Bake the cake until the top springs back when touched lightly, 30 to 35 minutes. Let cool for at least 10 minutes before serving.
