Pulled Barbeque Chicken Sandwiches

This is simple to make, healthy for you and delicious! Serve these over a foody crafts, Pillow Soft Dinner Rolls or store bought multi grain bun to keep this meal low in sodium, low in fat, high in protein and fiber.

4 Fresh or fresh frozen boneless, skinless chicken breast (2 to 3 pounds)
2 cloves garlic, minced
fresh ground black pepper
1 onion, finely chopped
1 1/3 cup of your favorite low sodium, barbecue sauce.
1/3 cup cider or white vinegar.
1 cup water

Place chicken in crockpot with garlic, onion, vinegar, 1 cup barbecue sauce and water. Cook on low for 6(7 if chicken breast is frozen) hours or high for 3 (4 if chicken breast is frozen). Remove chicken from crock pot, shred and place in serving dish. Spoon some sauce from crock pot over the chicken and add 1/3 cup barbecue sauce. Stir chicken to coat with sauce then, serve over warm rolls or toasted buns.
