Greek Chicken or Pork

Recipe by: Amelie Kidd
A fantastic winter meal but, certainly delicious year round. Great for pork or chicken.
Feta cheese is a third less the calories than say a sharp cheddar with every bit the benefit of belly fat burning calcium. Enjoy ladies!

Preheat oven to 350*

1 tablespoon olive oil
1 sweet onion, thin sliced
salt, to taste
pepper, to taste
garlic powder, to taste
1 cup diced tomatoes
1/4 to 1/2 cup feta
3 cloves sliced garlic
handful of fresh basil leaves (if possible, if dry, 2 tbs)
2 teaspoons balsamic vinegar

Heat oil in skillet, sautee onion till half done.
Season both sides of pork or chicken with salt, pepper and garlic powder
Add to skillet and cook till barely white on both sides.
Cover handle of skillet with reynolds wrap.
Add all other ingredients except for feta
Cover pan with reynolds wrap and place in oven for about 30 min (check to see if done around 20-25 mins, be careful not to overcook)
When serving, add feta cheese.

Thank you, Amelie for another great add to the recipe list!
